Ingredients
  

  • 1 tbsp olive oil
  • 1 onion minced
  • 2 green onions minced
  • 1 cup white rice uncooked
  • 2 tbsp curry paste
  • cups vegetable stock
  • cups black beans cooked, rinsed, and drained
  • 1 cup peas
  • ¼ cup raisins chopped
  • cup pecans chopped
  • Salt & Pepper to taste

Instructions
 

  • Heat olive oil over medium heat in a medium pan.
  • Add in onion, cover and cook for 5 minutes.

If you want more heat add more curry. Really play with it according to what you like.

  • Stir in green onions and cook for an additional minute.

Looks like an odd combination but don’t fret, it is good!

  • Stir in curry paste and rice and combine all well.
  • Add in vegetable stock, cover and cook for 45 minutes or until rice is tender.
  • Gently stir in beans, peas, raisins and pecans and heat through.
  • Salt and pepper to taste.
  • Serve hot.
