Vegetable Biscuit Cobbler
This delicious cobbler is made with a variety of fresh vegetables, including carrots, celery, and onions. The biscuit dough is rolled out and then cut into small circles. The vegetables are then placed on top of the dough circles, and the cobbler is baked in a hot oven. The result is a tender, flaky biscuit cobbler that is packed with flavor. Serve this cobbler with a dollop of sour cream or yogurt for a truly delicious treat.

Filling:
- 2 cups carrots julienned
- 1 onion chopped
- 2 potatoes skinned and diced
- 16 oz Green Beans trimmed and cut into 1 inch pieces
- 1 cup corn
- 1 cup Peas
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp oregano
- 2 tsp parsley
- 2 tbsp olive oil
- 8 ounces seitan Seitan Recipe
Sauce:
- 4 tbsp butter
- ⅓ cup flour
- 1½ cup vegetable stock
- 1 tbsp Worcestershire sauce
- 1 cup milk
- Biscuit Topping: 2 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 2 tbsp butter
- 1 cup milk
Most of the vegetables used are probably in your house right now.My green beans were cut too long for me. Cut them to a length that is easy to put in the mouth!
Don’t be intimidated by making a roux, simply keep whisking!
Whisk in flour and whisk constantly for 4 minutes.
Stir in vegetable stock, Worcestershire sauce, and milk.
Continue to whisk constantly as sauce thickens over the next 5 minutes.
Turn off heat and set aside.
In a large bowl, combine flour, baking powder, salt, and 2 tbsp of melted butter.
Using a fork or pastry blender combine into coarse crumbs.
Add in milk and form a soft sticky dough. Set aside.
Chop up seitan into small pieces.
Don’t have or want seitan? Leave it out for a vegetable cobbler. Some of my friends add in chicken instead, up to you!
In a large pan, heat 2 tbsp of olive oil over medium heat.
Add in carrots, onion, and potatoes.
Cover and cook for 5 minutes.
Stir in seasonings and seitan.
Cook for an additional 5 minutes.
Stir in green beans, corn, and peas.
Add in sauce and pour into baking dish.
Top with biscuit topping and spread evenly but not to edge of pan.
Bake for 30 minutes or until topping is golden brown.
Serve hot.
