Ingredients
  

Fried Chicken:

  • 3 eggs
  • cup water
  • 1 cup hot sauce
  • 2 cups flour
  • 2 tbsp pepper
  • 2 tbsp garlic powder
  • 1 tbsp salt
  • lbs chicken pieces
  • Oil for frying

Caribbean Rice & Beans:

  • 1 can red kidney beans drained
  • 1 can coconut milk
  • 2 cups rice
  • 1 small onion chopped
  • 1 clove garlic chopped
  • 1 bay leaf
  • ¼ tsp thyme dried
  • 1 tbsp oil

Instructions
 

  • For the chicken: Heat oil to 350 F in a deep pot.
  • Do not fill pot with more than ½ full of oil.
  • Beat eggs with the water and add hot sauce to mixture.
  • Put flour in a separate bowl.
  • Season chicken with the pepper, garlic powder, and salt.
  • Dip chicken pieces in the egg mixture then coat well with the flour.
  • Fry the chicken in the oil until brown and crispy.
  • Dark meat will cook for about 13 minutes and white meat 9 minutes.
  • For the Rice & Beans: Add beans, coconut milk, and 3 cups of water in a large pot.
  • Bring to boil and add the onion, garlic, thyme, bay leaf, and oil.
  • Add the rice when it is all at a boil and stir for two minutes.
  • Reduce heat to medium-low and cover.
  • Cook for 30 minutes or until rice is tender and cooked through.
