Ingredients
  

  • 4 lbs of potatoes skinned and cooked until tender, chopped
  • 10 strips of bacon cut into little pieces
  • 1 large red onion finely diced
  • ¼ cup white wine vinegar
  • ¼ cup of olive oil
  • 2 tbsp sugar
  • 4 hard-boiled eggs chopped
  • 2 stalks of celery diced
  • 1 cup sour cream
  • ½ cup mayonnaise
  • Salt & Pepper to taste

Instructions
 

  • In a large bowl combine onion, with vinegar, olive oil, and sugar.

Combining the onion and sugar and vinegar and letting them sit really infuses the depth of the potato salad. The sharpness of the vinegar is cut but still is able to give off a great flavor.

  • Let sit for 10 minutes.
  • Add in celery, bacon and potatoes.
  • Fold in sour cream, mayonnaise, and eggs.
  • Salt & pepper to taste.

I always will make ahead the day before to have it super chilled and set to serve.

  • Chill for 1 hour minimum.
